I have been eating a lot of kale salads lately, and someone at work mentioned that she makes kale chips. Regular potato chips are very addictive, and wanted to give this a try to get rid of that "crunch" craving I know we all get, while eating healthy. Let's just say that I made a whole sheet full, and may have eaten them all, but I didn't feel guilty! Win.
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper or a silicone mat. Place kale pieces in a bowl, and drizzle with olive oil and sprinkle with desired seasoning. (I used chili powder on half, and a garlic herb blend.) Bake until the edges are crispy, but not burnt, about 8-14 minutes.
