This past weekend, I ran the Disney Princess 1/2 Marathon along with 25,000 other runners. I was really excited to complete this race, and it was so much fun. Along the miles, there are characters to stop for, bands, and plenty to see. I didn't get a chance to stop for many characters, as I was worried about maintaining the 15minute mile pace and didn't want to get picked up. But I did snap a few pictures of some of the ones that were out. Entry walkway to the dance floor, vendors, and bag check tents. Map of the course. That overpass at mile 10 was a tough one! Before the race start. Port-o-lets lined up. Runners everywhere! Characters along the run. I didn't have time to wait in line, but wanted to share, these are some of the more rare characters you don't see out much. Running through the Magic Kindgom. Finisher medals at the end. Inside the race retreat tent. Breakfast inside the race retreat. Character opportunity before the race. Character opportunity after the race. I really enjoyed this race, and had a great time. It was a new experience, and am proud that I completed it. Congratulations to all of you who ran as well!

This year, the Princess 1/2 Marathon Expo was held at Disney's Coronado Springs Resort. I'd never been to this resort prior to yesterday, and was amazed by the size of the property. Before starting my volunteer shift, I picked up my race day gear, including my bib with tracker chip and t-shirt and gear bag. I'm really excited to be running this race in less than a couple days! Empty expo floor. Blurry picture of some of the vendors. Assembling gear bags for the next days pick up. Can't pass up a Disney photo! And I love the pink shirts they give the volunteers. I plan on taking many photos during the race, and will post a recap soon!
In this weeks sale ad, Walgreens has Chex Mix for $0.99. But in the January coupon book, there is a $0.50/1 coupon! With the sale and coupon, it makes them just $0.49 per bag! I stocked up for super bowl weekend, and with some home made snacks, I'll be set. And by the way, the Turtle Chex Mix is pretty amazing!
There are also some pretty great deals on Tostitos, Lays Chips, and Doritos. You have until Saturday night to get these deals, so make sure to stock up! This weekend I volunteered at Disney World for the 1/2 Marathon & Marathon. The line to enter the expo building was wrapped around the sidewalks and down by the fields. And once you get inside, there are people and vendors everywhere! I didn't run this race, but I couldn't resist getting my picture taken. I'm counting down to the Princess 1/2 Marathon in February though!

Regular potato chips are very addictive, and wanted to give this a try to get rid of that "crunch" craving I know we all get, while eating healthy. Let's just say that I made a whole sheet full, and may have eaten them all, but I didn't feel guilty! Win.
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper or a silicone mat. Place kale pieces in a bowl, and drizzle with olive oil and sprinkle with desired seasoning. (I used chili powder on half, and a garlic herb blend.) Bake until the edges are crispy, but not burnt, about 8-14 minutes. In this weeks Target ad, they have Mio buy 3, get a $5 Target gift card.
